A Camp Lucy team member was struggling with an easy but festive cocktail to serve at a party at their home this past weekend, so once again we turned to our fabulous Camp Lucy Catering Director Tiffany Keith for help (she may get asked more questions than a doctor at a party). Tiffany suggested serving Poinsettias and they were a huge hit! Poinsettias are a sparkling wine-based cocktail with cranberry juice and an orange liqueur. Recipe, below. And for a non-alcoholic version, you could substitute ginger ale. Thank you again, Tiffany, and cheers!
Poinsettia Recipe

Ingredients
1 750ml bottle Champagne or other sparkling wine, chilled
1/2 cup Cointreau or Grand Marnier or Triple Sec, chilled
2 cups cranberry juice, chilled
1. Pour the Cointreau and cranberry juice into a large pitcher.
2. Stir well.
3. Top with Champagne.
Note: For quick party service, and to make sure your Poinsettias stay bubbly, mix the first two ingredients in a pitcher and keep chilled until it's party time then top with your bubbly and start pouring!
