When we think Fat Tuesday we think beignets, but
just recently learned that the history of doughnuts (and variations on pillowy fried dough) is intrinsically linked to the celebration of Mardi Gras. In Poland, Fat Tuesday is called Paczki Day and in Portugual it’s Malasaday Day – paczki and malasadas both being variations on doughnuts. Of course, around this part of the country, beignets are the most widely known Mardi Gras doughnut thanks to the French Acadians who were deported to Louisiana in the 18th Century. And around Camp Lucy they are THE Mardi Gras doughnut thanks to our resident New Orleanian,
