Cinco de Mayo

Last Christmas, Camp Lucy Catering Director Tiffany Keith shared her recipe for Poinsettias, a simple holiday cocktail mixed and served in a pitcher and perfect for parties - it was the smash hit of the holiday season. As today we celebrate perhaps the biggest unofficial holiday in Texas, we sought Tiffany's cocktail counseling once again. So, just in time for Cinco de Mayo, she shares her favorite super-simple margarita recipe.  

Margaritas
12 oz. can of frozen limeade
12 oz. tequila
12 oz. 7-Up (1 can)
1 bottle of Corona
Stir in a pitcher - so easy! Garnish with fresh limes and pour over ice in a salt-rimmed glass. Tiffany's note: "I was making these long before 'beer-garitas' were popular, and let me tell you, they are so good! The trick is that you cannot substitute things - so no Corona Light for Corona and no Sprite for 7-Up. You can however scale back on the tequila a little because these are quite stiff."

And for the non-alcohol drinkers and designated drivers, just adapt the same basic ingredients - equally festive!

 Limeade Punch
12 oz. can of frozen limeade
2 liter bottle (or about 5-6 cans) of 7-Up
Fresh squeezed lime juice to taste (if you want to cut some of the sweetness and brighten the flavor) Ice
Stir in a pitcher and garnish with fresh limes.
